We are back with another soup recipe! I've seen this going around allllll over TikTok, and of course I had to try it for myself. Below is a twist on the recipes I have seen. I have just substituted some ingredients for a healthier / higher protein option.

Ingredients
1 lb of ground turkey (you can use ground beef)
2 tablespoons of minced garlic
1 1/2 cups chicken broth (use bone broth for more protein)
1 1/4 cup tomato sauce
1 tablespoon tomato paste
1/2 cup of unsweetened almond milk (you can use regular milk)
4 lasagna sheets
Dash of Italian Seasoning
Dash of Pepper
2/3 cup part skim Ricotta cheese
Basil (I just used flakes, but fresh is best!)
Mozzarella Cheese (I just grab it out the bag and load it on)
Instructions:
Cook the turkey: In a large soup pot, add minced garlic, pepper, and turkey. Cook the turkey (or beef) over medium-high heat, breaking it into small pieces, until brown.
Add Broth: Pour in the chicken broth to the pot.
Add Canned Items: Add Tomato Sauce and Tomato Paste.
Add Milk: Add in your almond milk
Lasagna: Break apart 4 sheets of lasagna, and add it to the pot. Mix together.
Simmer: Add some Italian seasoning and cover. Let simmer for 8-10 minutes.
Cheese: While food is cooking, in a separate bowl, mix together ricotta cheese and basil.
Mix: Once noodles are fully cooked, add in Mozzarella cheese and ricotta cheese mixture.
Stir: Mix all ingredients
Enjoy: Ladle the Lasagna Soup into bowls, you can always add more broth or milk if you want it more soupy.
